This wine associates its quality with the name of the Carthusian monks who, since 1598, have practiced a solitary life of prayer in the Convent of Santa Maria Scala Coeli, in Évora. It was first produced in 1986.

Grape Varieties Touriga Nacional Soil Type Granitic

Cartuxa rosé was produced from two plots of Touriga Nacional, planted in the vineyards of the Eugénio de Almeida Foundation. Manual harvest, with subsequent cooling of the grapes to 14ºC, before total destemming and optical selection of berries. After pressing (gravity loading), only the fraction of the must from drainage and low pressure was selected for fermentation in stainless steel tanks and barrels – 10% of the batch fermented in used barrels, intensifying volume and greasiness. Malolactic fermentation was not carried out. Aging on fine lees for nine months with regular batonnage. Service Temperature 10ºC to 12ºC
