VINIFICATION / INTERNSHIP
The grapes arrive at the winery in the morning, when the temperature is lower, and are placed in the pneumatic press. The pressing cycles are long with low pressures, allowing careful extractions for a rich must. Decantation is shorter than usual, which helps to maintain the complexity of the medium. Fermentation takes place in new 550 liter French oak barrels, in a cellar with a controlled temperature of 18ºC.
On the fermentation lees accompanied by batonnage, to provide the integration between the wood and the wine increasing its creaminess and depth. After filling, it remained in bottle for 6 months, during which it had a controlled maturation that promoted the characteristic complexity of this wine.
COLOR
Crystalline appearance, straw color.
AROMA
Apricot and lemon peel confit, mixed with notes of cloves, nutmeg and some white chocolate.
TASTE
Wide and rich, the white pulp fruit predominates, dotted with notes of white pepper. Unctuous, with a long and elegant finish.
