The grapes of Quinta das Bágeiras white wine cellar come from old vines, over 75 years old. It is vinified with an open spout, and the must is placed in small decanters of 1m³ where it remains between 24 to 36 hours to decant through natural precipitation. At the end of this process, the must is transferred to old 2500l wooden vats, where hundreds of fermentations have already been carried out. It is bottled without any type of filtering or sizing (clarification process, in which proteins are dragged) and not always in the same month, as we let the wine itself decide when it is ready for bottling. We wait for him instead of forcing him.
