Grape varieties: Baga Average production: 7 000 bottles The grapes in this wine come from very old vines (aged over 90 years). They are fermented between 5 to 8 days in an open press without destemming (the berries are not removed from the bunch). Then, reassembly is made with wood masses, several times a day, until they reach the correct intensity. Then, the wine finishes fermentation in old wooden vats. While resting it is cleaned and aged in the same vats for about 18 months. It is bottled without any gluing or filtering. All of these processes are done manually. It is a wine that is only produced in years of exceptional quality.
