It is a wine made from grapes from vines that are about 15 years old, whose production has been drastically reduced. It was vinified using an open spout, the must being placed in small 1m³ decanters where it remained between 24 and 36 hours to decant through natural precipitation. At the end of this process, it fermented in used French oak barrels that we acquired in the Burgundy region. It was made a light bâtonnage and aged in the barrels until it became completely clear, in a natural way. Bottled without filtering or gluing. Very complex and opulent nose, yellow fruit, soft jam, notes of bergamot and dried flowers, spices, minerals, confectionery. In the mouth, everything thins and concentrates, with incredible precision, firm structure, high acidity very well integrated, long and luxurious finish.
