Scala Coeli red 2017 Regional Alentejo wine of excellence, the Scala Coeli red 2017 comes from vineyards over 30 years old and was made from the Syrah grape variety, harvested on August 17th, through a rigorous choice of grape berries, ensuring its high quality. The wine year of 2017 was characterized, from the climatological point of view, by a spring with mild temperatures and low rainfall, followed by a very hot and dry summer, which led to a shorter vegetative cycle. Despite the adversities, maturation was complete and fully achieved in all grape varieties, verifying that the balance between production and vegetative expression, as well as the support with the necessary irrigation, were fundamental for the good result of the harvest, having been 8,540 numbered bottles of wine were produced. Before fermentation, a peculiar pre-fermentative maceration was carried out in order to enhance its complexity. Fermentation took place in French oak vats, with controlled temperature and manual pumping over. The alcoholic fermentation was carried out with natural yeasts so that the authenticity of the wine is the real expression of its terroir with the particularity of working with a non-indigenous grape variety from Alentejo. After fermentation, peculiar post-fermentative long macerations were carried out. The Scala Coeli red 2017 aged for 15 months in French oak barrels, followed by 12 months in bottles in the cellars of the Monastery of Cartuxa.
