VINIFICATION 2018 was a fresh year until August, with the coolest July in the history of the sec. XXI. The maturation of the grapevine showed a delay of about 3 weeks compared to 2017. In the first days of August there was a sharp rise in temperature: August 4th was the hottest day of the 21st century (to date), having the maturation of the grapes continued slowly during the month of September. Due to the imposed water stress, the plants originated musts with little alcohol content and good phenolic maturation, with a lot of complexity and minerality. The white grape harvest started on September 5th and ended on October 2nd. TEST RESULTS Redoma Reserva White 2018 spontaneously fermented in French oak barrels where it was partially malolactic and aged for 9 months. The fermentation in the barrel and the stage on the fine lees give a perfect structure to the Redoma Reserva which, combined with its acidity, makes the wine quite elegant and deep. In the aroma with a very floral character in harmony with the barrel, in the mouth it is vibrant and electric with a long and slightly salty finish.
