Winemaking This wine was produced exclusively from the Syrah variety. The grapes were rigorously selected for their excellent maturity. They were fermented without stems, at controlled temperatures, and regular delestage, with an extended period of maceration of the films to improve the fruit aroma and achieve a good balance and structure of tannins. Aged for 8 months in French oak barrels (90%) and American oak barrels (10%) until bottling in July 2015. Test results Black berry fruit, plums and delicate toast notes. Spices, earthy, complex. Elegant on the palate, with velvety fruit supported by a firm tannin structure. A classic Incognito, it is already accessible but with balance and structure for long-term evolution.
