Winemaking This wine was produced exclusively from the Cabernet Sauvignon variety. The grapes were selected and harvested in an optimal state of ripeness; it is always the last grape variety to be harvested on the estate. They were fermented without stems, at controlled temperatures, with regular delestage and an extended period of maceration of the films to improve the fruit aroma, to achieve a good balance and structure of tannins. Aged for 12 months in French oak barrels until bottling in April 2017. Test results Elegant and intense aroma of peppermint and black currant. Full and structured in the mouth, very ripe fine tannins that integrate ripe fruit. Designation: Alentejo Regional Wine Grape variety: 100% Cabernet Sauvignon
