The grapes are harvested from the end of August, according to the evolution of maturation in each vineyard and always in the morning, in order to maintain their freshness as much as possible. At the cellar, after destemming and crushing the grapes, the wort is depleted and pressed, safeguarding the quality and varietal characteristics of the must. The tear wort (must that drains without pressing) clarifies for 18 to 24 hours and ferment at a constant temperature of 18ºC, over 14 days. After a period during which the wine stabilizes by physical processes, it is bottled after winter. Clear appearance, well-defined citrus color. Good aromatic intensity combining tropical and citrus fruits. Soft, fresh flavor with a predominance of lime flavor, with a persistent finish to citrus fruits. Temperature of 8-10ºC. Accompanying seafood, fresh grilled fish, white meat or as an appetizer. This wine should be drunk young within 2-3 years.
